New season means new concept at The Restaurant by Pierre Balthazar. After welcoming Italy and France as ambassador countries to share the menu according to the original concept, some changes have been made to surprise your senses.

Pierre Balthazar, the Culinary Director of The Restaurant decided to say goodbye to his friend Michael Fulci (restaurant Les Terraillers* in France) to represent the Franco-Belgian cuisine himself. This new project was born because of his will to share his own culinary experience with his guests.

To start the new season, Pierre has invited two international guest chefs to propose their own interpretation of 9 base ingredients; Macarena de Castro (Spain) and Oth Sombath (Thailand). They teamed up with Pierre to offer their personal touch besides the traditional French cuisine “revisitée”.

On the menu, seasonal products and a new ingredient, the mussels, showcasing the authenticity and originality of these three talented chefs. A real trip around the world through the gastronomic universe.”
